Cooking Club!!!

 

 It was my turn to host Cooking Club this month, and I was excited.  Unfortunately, I was also a little disorganized.  It felt like it was taking me forever to pull lunch together.  I think I know the problem...I like to talk to much and was trying to talk while I made lunch!  I made a stir fry and flourless chocolate cupcakes.  

I made a beef stir fry with a brown sauce with broccoli and carrots.  Here's how to do it:

Slice the beef in long thin strips about 1-2 inches long.  Marinate them with 1 egg white, 1 T cornstarch, and 1 T Chinese rice win.  Let marinate for at least one hour before cooking.  This makes the meat so tender and juicy!

Slice carrots thin and cut broccoli into small pieces.  You could probably also use frozen vegetables.  I used baby carrots and sliced them as thin as I could (which was kind of hard!).  I love baby carrots because they are so sweet.  Blanch the broccoli by boiling it in salted water for about 1.5 minutes and then placing in ice water right away to prevent further cooking.

Prepare brown sauce:  Mix together 1/2 cup chicken broth, 1 T cornstarch, 1 T soy sauce, 1 T hoisin sauce, and 1 T Chinese rice wine.  

Put a tablespoon or so of olive oil in pan and heat.  Cook meat until cooked through, it will only take a few minutes.  Place cooked meat on a plate and wipe out pan.

Put about 2 T olive oil, two cloves chopped garlic, and vegetables in pan.  Stir-fry until crisp-tender.  Add meat and brown sauce.  Cook until sauce is thick and meat and veggies are cooked through.  

This would be great over rice.  Unfortunately, that part of my brain wasn't working and forgot to put the rice in the rice cooker!  I told you I was not feeling very organized!

Even without the rice, we all really enjoyed this and there were no leftovers!  This was from the March 2010 Food Network Magazine on page 75.

Now, on to the dessert.  I got this recipe from Smitten Kitchen and was super excited when I saw it.  I saw someone Food Network making something similar, but theirs was a cake and was much more involved than this!

Cupcakes:
6 oz bittersweet or semisweet chocolate (I used Ghiradelli bittersweet morsels)
6 T unsalted butter, cut into pieces
Heaping 1/4 t espresso or instant coffee powder (I didn't have this so I omitted and it came out fine)
3 Large eggs, separated
6 T sugar, divided
1/4 t salt
1 t vanilla extract

White Chocolate Mint Cream:
2 oz white chocolate, finely chopped
2 oz heavy whipping cream
1/8 t peppermint extract

Prepare the white chocolate mint cream:  Place the chopped white chocolate in a bowl and heat the cream to simmering.  Pour it over the chocolate and stir until it melts.  Add the peppermint and stir.  Now, here is where I would do it differently than she did.  She said chill for at least two hours and then whip.  Well, mine would not whip after it was chilled.  So, I would whip it before chilling.

Cupcakes:  Preheat oven to 350 and line 12 muffing cups with cupcake liners.  Stir chocolate, butter, and espresso (if using) in a saucepan over low heat until melted.  Remove from heat and let cool to lukewarm.  In a separate bowl, beat three egg yolks and three T sugar until very pale yellow.  A hand mixer works best here since it is such a small amount.  In another bowl, beat egg whites until soft peaks form (with cleaned and dried beaters!).  Add remaining three T of sugar gradually and all of the salt, beat until medium-firm peaks form.  Add chocolate to eggs yolk mixture and mix.  Then fold egg whites in in three batches.  Be very gentle!  Divid batter among prepared cups, filling about three-fourths full.  Bake abt 15-20 minutes until inserted tester comes out clean or with dry crumbs.

The cupcakes will fall in the center as they sit to cool.  Pile that delicious topping in the hole and enjoy!  You might have to double the topping recipe to have enough for all of it!  I ate two yesterday and need to make up more topping to enjoy the rest:)

Chocolate Factory

 

Tuesday night, Joel created a special surprise for the girls.  Here is Pnut with her "hat" on.
 
 
They toured the "Chocolate Factory," which they have been playing every day.  Pnut says every day that we are going to the chocolate factory and then they take an imaginary trip there....every single day.
 

So Joel made a mini-tour for them with production lines and paper hats just like at the real chocolate factory!

 

The finally station was a cake-making station.  It was one of those mini-cakes that you put in the microwave for like 1.5 minutes.  They loved it!  Their daddy is a special guy:)
*BTW, that is the Pnut's favorite, favorite outfit, and she wears it just about every other day if she can get away with it!

Streusal Coffee Cake

 

This is one of those recipes that I'm pretty sure  you should just stop what you are doing and make it and eat it all while it is warm!  It was really good.  I only had two pieces left when I brought it home from Bible study!

Topping:
1/2 c brown sugar
1/4 c sifted flour (sift before measuring)
1/4 c butter, room temperature
1 t cinnamon

Cake:  
1.5 c sifted flour (sifted before measuring)
2.5 t baking powder
1/2 t salt
1 egg, beaten
3/4 c sugar
1/3 c melted butter
1/2 c milk
1 t vanilla

Topping:  Combine ingredients and blend with pastry blender.

Cake:  Sift flour, baking powder, and salt in bowl.  In a separate bowl, beat together beaten egg, sugar, and butter.  Add milk and vanilla.  Mix well and stir in flour mixture and mix well again.  Pour into greased and flour 8x8 or 9x9 pan.  Sprinkle topping over batter.  Bake at 375 for 25-30 minutes.

The topping melts into the cake instead of staying on top and provides these wonderful swirls of brown sugar-butter loveliness all throughout it.  I really enjoyed eating this!!  The girls enjoyed making it too!:)

Letter Fun!

 

We try to keep school interesting.  

  

Today we did letters in flour.

 

It was a big hit!

 

The girls messed around and drew for about 45 minutes until I told them we had to clean it up!

 

It was a great learning tool and something fresh and new.  Now I'll probably hear about it every day...

 

This pain kept trying to jump up in my lap while we were at the table.  He would have happily licked all of the flour off!

 

Flour is nice because it really is pretty easy to clean up.

 

It also does wonders for your skin, if you like the ghost look.

 

Some children even like to put their animal crackers in it and cover them in flour and then declare, "I don't want it.  You eat it Mama."  No thanks!

 

A good time was had by all!

This Silly Skirt

 

I made this skirt for Pnut on Monday.  She was really excited about it and came to check several times to see if it was done.  Now she doesn't like it.  She thinks it is too long.  So if anybody wants a skirt for a three-year-old, just let me know!

Joel and I taught a class of 4th-6th graders at church tonight.  Joel really did pretty much everything.  But it was good.  It went really well, especially since we don't even usually go on Wednesday nights!  Hopefully by summer or next fall, we will be able to go.  The girls were pretty tired afterward though so I don't know!

So now I need to go to bed so I am ready for tomorrow!  Have a good night:)

Hearts:)

 

How is your heart?  Doing well after Valentine's Day?  Apparently that is supposed to be a stethoscope:)

I made these for my secret sister from Bible study.  I am not an expert embroiderer by any stretch of the imagination, but I thought they turned out cute!
We celebrated Valentine's Day on Saturday with a lunch out and then an ice cream treat at Maggie Moo's after supper.  Pilly got cotton candy ice cream.  Cotton candy ice cream is neon blue.  Pilly is now the queen of their Wall of Blue.  They took her picture before we left so we will have to try to remember to look next time we go!  (Interesting side effect of blue ice cream:  Blue poop)  Pnut got strawberry but declared she was getting cotton candy the next time we go.  Thankfully we go like twice a year so hopefully they will both forget about it by the next time!

Would you believe we are supposed to have more snow tonight?!  Thankfully they are only saying about 1.5 inches so it shouldn't be bad.  I am supposed to go somewhere tomorrow so I hope it is alright.  I do not like to drive in the snow.  The only accident I have ever had was when I hit black ice and driving in cold weather makes me nervous in general!

Our Adventures Out and About

 

We played outside in the snow today.  The girls could only play in the plowed areas.  We let them do something we never let them do...play in the street by our house.  Of course, there were no cars going anywhere anyways.
 
 
Joel was making "couches" for them to sit in and a little cave.  They both really had a lot of fun.  I was surprised that Pilly liked it, but I guess since she didn't fall face first into it, she was alright.
 

The neighbor took a picture of all of us outside.  There were quite a few people out and around shoveling and discussing the snowfall.

 

I don't know if you can see the snow and the path through it, but I thought this was a good representation of what we got!

 

All the houses across from us have a huge amount of icicles hanging off of them.  I hope they all fall off soon!  I always think about them impaling someone...  On another note, isn't the sky so blue?!

 

We had homemade pasta with cheesy meatballs for supper tonight.  I thought this was a fun picture!
Well, this is the last snow post...until we get another foot on Monday...Don't be surprised if I mandate a move to Africa where they get no snow.

I have to finish hand-sewing the last two cloth envelopes, which I will post pictures of soon, and then I have to do buttons on all 14 that don't have them yet.  I've only got until Tuesday, but I'll finish the hand-sewing tonight and buttons don't take long.  I probably won't like making buttonholes so much after I do 14 of them:)

More Snow, More Mess, and Followup

 

We had more of this today.  I think that we probably got at least another 20 inches on top of what we already had...no kidding.

 

It was nice to have Joel home from work today.  He will be off tomorrow as well, but that will probabl be spent trying to dig out of this!  He has to go locate our car underneath it all and try to help clear our street some.

 

The girls did this yesterday.  I took several pictures, and some moron (that would be me) started deleting them without them being put on the computer.  At least I saved one!  I love that they can do this together!

 

The girls both ate their supper all gone, and they got to have fudge pops for a treat.  Pnut inhaled hers.  Pilly should have so she wouldn't have gotten so messy!  She did enjoy it though:)
 
 
Pnut started drawing flowers today.  Are they not cute??  She watched me draw one and then she just started doing it.  That is how she learned to draw stick people too!  She is a visual learner, I do believe.
In a followup to yesterday's post, I wanted to let you know that I'm not just blowing smoke.  Randa and I placed our first order from Fair Indigo today.  I am super-excited!  Find a friend who wants to do it and split the cost of shipping.  They have a flat rate of $5.95 for all shipping so that is only $3 a person!  

I also meant to post yesterday about some recent buys that I have had.  Joel just bought a pair of pants at Marshall's.  They are supposed to just be an overstock store so there isn't anything wrong with the clothes.  The tag didn't say irregular or anything.  They were Tommy Hilfiger brand corduroys and looked really nice and comfortable.  The first time he wore them, they split right down the crotch seam while he was at work.  I sewed them back up.  The next time he wore them, he put his wallet in his back pocket, and it fell out.  He thought it just wasn't in right and put it back in.  It fell out again.  The pocket had ripped open in this odd jagged V-shape.  No rhyme or reason to it.  I patched it and hand sewed it so that hopefully it doesn't rip open again.  I just bought a pair of pants from Old Navy during their huge sale, and the other day one of the belt loops ripped off and left a hole in the pants.  I was able to fix it, but really, why should I have to fix these brand new pants.  For the price we could be paying if we weren't buying on sale, it is a real rip-off.  And those are only the two most recent examples!  I can think of others, but I won't bore you!  I'm just saying, I think we need to start thinking more about our fellow human beings and how they are being treated just because they weren't blessed enough to be born in the US, over which they have no control!

Fair Indigo

I've been thinking this post over for a while.  Thinking about how to say it without sounding preachy.  Thinking about how it really should matter...to everyone, not even just to Christians...

Joel and I are really being challenged about how we live, how we spend our money and on what, and how much we are giving away, of money and of ourselves.  One thing that has struck me recently is not only how we should care for the homeless, but also those who have pretty horrible jobs. 

I recently started watching a documentary of six British young adults who are in India spending time with some families who work in the clothing industry.  In other words, these people work in sweatshops.  First, they went to the best place to work.  The people who sew the collars are expected to put out one collar a minute.  They aren't allowed to get out of their chairs.  If they need something, they raise their hand until the floor manager comes over.  They didn't say how old the girl was that worked there, but she looked about 13 or 14.  The highest paying common job was the equivalent of about $2/day.  A bottle of deodorant (which may or may not be important to all people groups, but the British students thought it was pretty basic) cost about $1.60.  So, either eat some food or buy deodorant.  And that was the best paying job.  So there were people there making less.  Less for ironing all day in the heat.  Less for buttoning eight buttons on 100 shirts.  Less for cleaning.  Can you imagine? 

They stayed with the families of the workers.  One house had one room, the other had two rooms.  Each family was between eight-ten people.  Their "bathroom" was outside or a bucket in a closeted area.  They cooked their food over an open fire. 

After spending a few days at this "good" factory, they went to a for-real sweatshop.  There the workers spend about 18 hours every day putting whole clothing items together.  They sleep at the shop.  Their "cafeteria" was one single gas burner.  They take a shower there, if there is a shower.  I'm not sure when they get to go home or when they see their families.  Maybe that will be in the next episode.  But just thinking about it makes me want to cry.  This wasn't just some TV show.  This is these peoples' lives!  It is all so distant, so easy to forget.

Remember that first, so-called good factory?  They make clothes for high-end stores here in the US.  I'm going to bet some of those clothes are in the mall.  And how much do we pay for them?  Why do people think it is okay to pay $60 for a pair of jeans or $30 for a shirt when the people are being paid so little to make these?  You can't tell me they aren't making a killer profit.  I don't think it is wrong to make a profit.  I do think it is wrong to collect $40 per item when you are paying like two cents per item to the person making it.

And that is why I am excited to tell you about this website I found.  It is called Fair Indigo, and they participate in fair trade.  That means they are paying people a livable wage for their work.  They use a fair wage calculator put out by the World of Good Development Organization to help determine what a livable wage to each particular area is.  Here is their statement about fair price or wage:

For commodities such as coffee or tea, fair trade price standards are set by international Fair Trade Labeling Organization. The price attempts to cover the cost of production and a living wage to cover the basics of food, shelter, clothing, education, and medical care. Importers and retailers are then screened and certified by TransFair USA to ensure that they are paying the Fair Trade price for products. While there currently is not a certification for crafts or apparel, businesses committed to fair trade principles focus their efforts on paying a living wage (as opposed to the legal minimum wage dominant in the industry).

You can learn all about them and their mission in their about section.  It is very interesting!    One thing I really like is that they have a list on a page in the about page of others who are in the same business, others helping to spread fair trade. 

Looking over the clothing, the prices really aren't as expensive as you would pay in some stores in just the mall, not to mention the super high-end stores.  Their sale section is super-reasonable.  The children's section isn't very big, but hopefully that will grow. 

The realization that I've come to is this:  My children do not need six pairs of pants, 13 long-sleeved shirts and 20 short-sleeved shirts, and 10 pairs of pajamas (not to mention however many dresses!).  If I put the money into just a few pieces of fair trade clothing, I would probably spend about as much as I do buying all that regular stuff from the thrift store and at sales, and I would be helping someone to live.  And that is worth it.  So if you start seeing my kids wearing the same three outfits all the time, don't make fun of them.  This doesn't mean that I am going to totally stop buying from stores.  I'll probably still shop sales and thrift stores if we need something.  I also still plan on making things for them.  But we are going to try to put our money towards helping people. 

A lot of the fair trade stuff is organic and is made in a more sustainable way.  I can hear some of you groan right now.  But my thinking on organic is shaping into something like this:  I do not believe in global warming.  I recently read something from a "global warming expert" that while global warming is still going on, we are experiencing a cooling period.  In other words, they have no idea what they are talking about.  Who are we to think that we have anything to do with the climate?  I believe that God is firmly in control of that area!  However, I do know that air quality is not great and quickly becoming worse.  I do know that more people have asthma than ever before, and it is getting worse every year.  I read of a girl who had asthma, went out on a smoggy day in D.C., and died from an asthma attack from the poor air quality.  That is wrong.  When products are made in a "better" way, they are not adding to the problem of the air.  Something does need to be done about the quality of the air, and if these companies have found a way to make products in a better way, I commend them for it.

Ugh, Snow

 

I am officially tired of the snow.  I've had enough.  It can all leave now.  Parking is a nightmare.  It isn't going to melt until like May.  


 

The dog is enjoying himself, however.  He loves to bite it and run around in it and be crazy.  We got about 20-21 inches.  The girls cannot even play in it because they wouldn't be able to move.

 

We spent our Saturday finding inside things to do, which included blocks.  We love blocks and can play for about an hour with them.

 

We also played three games of CandyLand and the girls played in the basement.  Thank goodness our friends from Sunday School had their Superbowl regardless of the outside mess.  The girls and I had not been out of the house since Tuesday.  We had a lot of fun, and it made it easier to stay home today!
We are supposed to get up to a foot more starting tomorrow.  Yippee skippee.


 

And I wanted to show you this so that you could see why I limit the girls TV.  They were watching a music video.  Turn on the TV and they are zombies!  That is why we only do Sunday afternoons, one movie, or if we are going to be trapped inside all weekend, Saturday mornings as well.   

On another note, the girls and I have been watching zulucam.org, and it finally paid off today.  It is a camera that is set up at a wildlife reserve in Africa somewhere.  Today we saw two elephants!!  We were all really excited.  It gets dark there right around lunchtime here so that is when the animals start to come back.  Apparently, they also come early in the morning and the elephants come a lot at noon, but I haven't quite figured out the time differences yet.  I know we wouldn't see the early morning, but I don't know about the noontime.  It is worth it because different animals just wander by, but the elephants were the first that we were able to see really clearly and they stayed for a while!  Fun:)

 Well, tomorrow is Bible study, but I won't be going because I won't park or try to pull out of the parking spot in this crazy snow.  So it looks like we may be home for a few days again!

English Muffins

I love Thomas' English Muffins; they are superior to any other muffin.  However, they also cost an arm and a leg for something that would only last a few days.  So when my Bread! cookbook had a recipe for English Muffins, I was stoked.  (I learned stoked from a Canadian friend I went to college with.) 

 

This is from page 113 in the book, btw.
2/3 c whole milk
2/3 c water
2 T melted butter
1 T sugar
1 t salt
2 c bread flour
2 c flour
2.5 t instant or fast-acting yeast
Fine cornmeal to dust

Put the ingredients in your bread machine as directed in your book.  For mine, that means wet first (along with melted butter), sugar and salt, then flours with a well for the yeast on the top.  Set machine to dough setting and start.  When cycle is complete, turn onto floured surface and knead into a smooth ball.  Divide dough into equal portions and shape each into a round, flat 1/2 inch thick disk.  Dust each with cornmeal and place in a warm place to rise for about 15 minutes (until they begin to lose their shape).  Don't let over-rise.

Heat a pan (preferably nonstick or a griddle) to somewhere between low and medium.  and lightly brush with oil (EVOO).  Cook as many as you can comfortably fit into pan at a time, about 8-10 minutes on each side.  Don't have the heat too high or the outside will burn without the inside cooking.  Flip and do other side.  They are done when they sound hollow when tapped.  Put the extra dough in the fridge so that it doesn't continue to rise.

I toasted mine and they were delicious!  Today I put egg salad on one, and it was great.  The girls like them a lot too!  The recipe says it only makes.  However, I disagree:)  I had a few huge ones.  I would definitely do them a little smaller and try to get the amounts of dough super-similar so that they all cook at the same rate.  The cornmeal on the outside is just like Thomas'!  

They weren't as nook and cranny filled as Thomas', but I think that was in part due to the fact that I didn't let them rise long enough after they were formed into disks because I was afraid they were getting too big!  They did have the same taste though.

I think this would be easy to do without the bread machine.  Just add the yeast to the water and sugar and let it activate and then add all the other ingredients and knead until smooth.  Let rise for at least an hour and then pick up where the recipe comes out of the bread pan.

I hope that you do get to try this!  I really did enjoy them:)

Do These Look Like Beds?

 

This was our bathroom two days ago.  Joel finished laying the flooring yesterday and is planning on putting the molding on this weekend.  I will post a picture when it is finished.  It looks great!

 

Pnut and Pilly were playing in their room, and when I went in they were "sleeping" in their "beds."  Pnut was tucked into the little area that is formed by a shelf built into the wall.  


 

Pilly was in the toy basket under at least three blankets.  She wanted more.  I said no.  
I am busy working on a project so I don't have much time to blog at night.  Hopefully, it will be wrapped up in a few days!  Tomorrow, I am hoping to do my post about homemade English Muffins...yum!

Out of Routine

Joel had the day off today because he was working on the bathroom floor.  He has replaced all of the floor tiles and just has to do the molding, which I hope he will do after work tomorrow night!  I would like to have the bathroom back in order.  I have a hard time with mess.  We are spending a lot less time upstairs because I don't like the mess!!

So since he was home, not a lot was accomplished today.  It's not his fault, it just messes up our routine!  That is probably one of my favorite words....routine!

  
  

Aside from dumping 1/3 of a container of mini-marshmallows on the floor today, they had a pretty good day!  We played "The Fast Game" for school today.  That is, Pnut points as quickly as she can to a flashcard as I call out the letter.  They are lined up across the table but not in order.  She loves this game, much better than memory!  

Tonight is the premiere of Lost!!!  We are super-excited:)  Only 13 minutes left so I had better go:)

What Went on Here

We had company over Saturday night, our friends who have a little girl Pnut's age.  They all had a lot of fun.  Most of the night they spent in the basement playing dress-up and kitchen.  Pnut asked us to come down and watch them, but we stayed upstairs to talk instead.  We should have gone down.

 

Pnut is the only one I got a picture of.  I wish I had gotten her friend because she was the worst one!  She had it all through her hair and her face was silver.  
 
 
I have no ink pads left.  We don't really care about the carpet in the basement, it is just a bound remnant, but still, I wouldn't have chosen this method of using up my ink pads.
 

This is the footprint that showed up best.  It is colorful.


 

Mostly we were thankful they were in dress-up clothes and not in the regular clothes.  This blue is all over a pair of Pilly's socks.  They cannot be salvaged.  I don't want to wash them because I don't want the ink to travel on to anything else.
They were so excited and proud of what they had done.  Gail said Maddie constantly pretends to put on make-up and sits in front a mirror.  Pilly wouldn't stop rubbing ink on stuff.  Her legs are still red.  The red is definitely the hardest to get out!

Okay, well, there is some work for me to do now.  Have a colorful day!
